Preparation of filled Halloween cupcakes

- You have to start making the muffins and for this mix the lemon juice with the milk, letting this mixture rest for about 5 minutes . The pumpkin, cut into large pieces, cover it with plastic wrap and put it in the microwave for about 12 minutes , so that it softens.
- In a bowl you are going to beat the eggs with the sugar , until you get a whitish mixture, which will also double its volume. In another bowl sift the flour, making a hole in the center to add the yeast , and mix.
- Pour the flour over the egg mixture and beat vigorously to form a unique mixture. Immediately after, add the milk, also beating vigorously. Then the oil, beating again. Finally, add the pumpkin pulp at room temperature and stir again.
- To get the orange color you will add the coloring , but use only a little, about a tablespoon, at most two. Stir well until the mixture achieves that orange color that you are looking for.
- Mix half of the mascarpone cheese with half of the icing sugar . Then pour this mixture over the dough that has formed and stir well. Now you can fill, in half, the spaces of the cupcake molds.
- These will have to be baked, with heat up and down, for about 180º for about 10 minutes . After about 8 minutes, see that they are rising well. Also, click on them to see how they are made from the inside. When the clean knife or skewer comes out, you can take it out.
- Prepare a mixture with the remaining mascarpone cheese with the icing sugar , stir well and put into a pastry bag. Cover all the cupcakes with this mixture.
