Ingredients
This recipe is actually called Red Velvet… but it’s commonly known as a brain pie. These are the ingredients you have to resort to:
For the cake
- 240ml olive oil
- 240ml buttermilk
- 350 grams of flour
- 250 grams of sugar
- 40 grams of cocoa powder
- 3 large eggs
- 2 tablespoons red food coloring
- 1 tablespoon vinegar (white or apple)
- 1 tablespoon vanilla extract
- ½ teaspoon of salt
- 1 tablespoon bicarbonate of soda
strawberry buttercream
- 250 grams of unsalted butter
- 400 grams of icing sugar
- 3 tablespoons of semi-skimmed milk
- 3-4 tablespoons strawberry jam

Are you going to let a recipe as simple as this throw you back? But if even a child could do it! You just need to work a little and you will see how the result is slimy and disgusting.
Preparation of the red velvet cake
The first thing is to prepare the cake. To do this, follow these simple steps.
- After putting the oven to preheat, to about 175º, in a bowl you are going to beat the oil together with the buttermilk with the help of some electric rods. Add the eggs (they can be smaller if you want) and beat until the mixture doubles in volume.
- Next, and without stopping beating for a single moment , add the red coloring, the vinegar (which can be white or apple) and the vanilla extract . By beating for a minute all these ingredients should already be integrated.
- In a separate bowl, you will sift the flour . Then, with the help of a spoon, you will make a hole in the center. In this hole you will pour the cocoa and bicarbonate . Cover and stir a little with a spoon so that they integrate well.
- Transfer this mixture to the other bowl, beating on a low speed so as not to form lumps in the dough, and do not stop until the mixture looks creamy.
- Grease the mold you are going to use with a little butter and pour the mixture. Distribute well with the help of a spatula, to avoid lumps, and put in the oven, with heat up and down, for about 45 minutes.
- To find out if it’s ready, you just have to poke it, after 35 minutes, to see how it’s doing inside . When the skewer, or knife, comes out completely clean, it will be the signal to remove it.
- Once ready, let cool for about 10-15 minutes. Unmold, cover with plastic wrap and let this mixture rest overnight in the fridge, so that the mixture is more settled.
Strawberry Buttercream Preparation
We already have the cake, and now we have to do what will be the coverage, to give it that disgusting appearance. It is easy to do.
- Mix the butter in a bowl (remember that it should always be at room temperature) with the semi-skimmed milk and the sifted icing sugar . The result of the mixture should be a pasty mixture.
- Do not stop beating when you add the strawberry jam . Add it little by little, as if it were a trickle, and little by little it will take on a reddish appearance.
- Just like the cake, let this mixture rest in the fridge overnight, so that it gains a bit of body.
Brain Pie Assembly
The time has come to become the king of the night with your brain pie. Follow these steps to avoid making a single assembly mistake!
- First of all, cover the entire surface of the cake with a layer of strawberry buttercream . Don’t worry about it not being completely smooth.
- Fill a piping bag with the strawberry butter and fit the large nozzle. Make a dividing line, with the help of a knife, as well as the reliefs of the brain with a knife and cover these folds with a little bit of strawberry butter.
- Finally, if you want to give it a more terrifying look, you can use strawberry syrup to imitate blood and stick a knife in it to give it a more realistic look.
